Gorgonzola Victory Salad
From A Puree of Poison

Meg's Gorgonzola salad is easy to make and delicious. She suggests you have it as a main course for lunch, or as a side for a dinner with pasta.
Ingredients
1 pound bacon, diced
1 medium Mayan onion, diced
3 heads fresh Romain lettuce, well chilled
2 pints grape tomatoes, freshly picked
1 pint Kalamata olives
1 pint Gorgonzola cheese, well crumbled
quarter-cup sweet, pure olive oil
Sauté the bacon until limp; add the onion; sauté until the bacon is crisp.
While the bacon is crisping, break the lettuce into small pieces and place into a large wooden bowl. Add the tomatoes, olives, and Gorgonzola cheese.
Do not drain the bacon fat; it is part of the dressing. Add the olive oil to the hot bacon, stir the mixture with a wooden spoon, pour over the salad greens, and serve immediately.
