Recipes from The Perils of Paella

Fisherman's Delight:
Baked Gilthead Sea Bream

  • Preheat oven to 400° F.

  • Roat 1 peeled head of garlic separated into cloves on a lightly oiled baking heet for 10 to 15 minutes, remove from oven, an set aside.

  • Peel ½ lb. potatoes and slice very thinly blanche for 3 to 4 minutes in boiling water, drain, and pat dry. Brush bottom of baking dish with olive oil and layer slices, overlapping to cover.

  • Cut 1 ½ lbs. gilthead sea bream into 4 steaks about 2-in. thick. If sea bream is unavailable, use red snapper or sea bass. Arrange steaks on top of potatoes.

  • Bake fish for about 10 minutes; then arrange evenly around the edges (not on top) 2 peeled, seeded, and quartered tomatores; 1 roasted, peeled green pepper cut into strips, 20 small pitted black olives such as Nicoise, the baked garlic cloves, a bay leaf, and 1 botifarra sausage cut into ¾-in lengths.

  • Sprinkle on top of fish 1 minced sprig of fresh thyme or ¼ tsp. dried, plus salt and pepper.

  • Bake for 15 to 20 minutes more or until fish and sausage are done.

Serves 4 as a main course.
