The World's Best Omelet

Meg ended up serving this omelet at the April meeting of the Hemlock Grenadiers Volunteer Police Department Brunch. In return, they tore up all her kitchen violations, and she didn't have to move her refrigerator after all.
Ingredients: (serving for two)
4 oz. cream cheese, softened
½ cup chopped smoked salmon
4 tablespoons chopped chives
1 tablespoon very good mustard
Mix well.
4 eggs
1 tablespoon cream
1 tablespoon flour
Beat until frothy.
Melt two tablespoons butter and a dash of olive oil into an eight-inche sauté pan. heat on medium high until butter is melted and slightly brown. pour egg mixture into pan and cook, running the tip of a spatula around the edges so that the mixture cooks evenly.
When the omelet is cooked, remove from pan, spread with mixture, fold over, and return to pan. Cook about fifteen seconds on one side; flip and warm the other side.
Serves two.
